Nobel Prize is not given out for anyone particular book. It is given for an overall contribution to literarture. Thats what sets it apart from other awards.... So you cannot say He won the Nobel Prize for thsi book or that... No!
As far as other fields are concerned, the Policy is to give the award to the most influential invention or discovery made that year. This applies for Science and Economics. You may search out what who was the winner and then read about their work...
If you mean CItation by 'paper', you will get all the Nobel Prize citations on their website.
